This thesis examines the link between composition, structure formation, and absorption of milk during digestion. The fat content of milk has been reported to arrange into highly-ordered structures during digestion. This work aims to determine which type of fat was responsible for forming these structures, and whether it was important for the uptake of nutrients and drugs.
