Understanding the Agglomeration-Coating Process in Confectionery Panning

Sugar-panning is a process widely used in the food industry, 100’s & 1000’s as an example. This a particle enlargement process, core particles are added to a rotating pan followed by cyclic addition of liquid binder, powders and then dried. This creates a thin layer on the core particle’s surface. These layers are slowly built, making it a time-intensive process; furthermore, complex interactions occurring during its development are not fully studied yet. This work aimed to reduce the current research gap by studying and understanding this coating-agglomeration process and developed a generic operation algorithm to control the process.
