This thesis looks at why the regulation of raw milk is contested, particularly in countries where its sale as a food is banned. It focuses on how different people, such as regulators and producers, can conceptualise raw milk as fundamentally different. It then highlights the potential for food safety regulation to better acknowledge, and responded to, different versions of food and risk.
