Protein-based Value Addition of Underutilised Pulses

​The thesis investigates the application of underutilised pulses (Lentils and Mungbean) in developing meat-analogues. These pulses have comparable functionality to the commercially used Soy and Pea and​ thus can be sustainable alternatives​ for plant-based proteins.
