Multiscale modeling of starch-based food digestion in the intestinal tract for dietary property-based glycemic prediction

This thesis presented an intestinal digestion model considering both intrinsic granular properties and extrinsic physiological factors, utilizing a multiscale modelling strategy. A particle-scale starch hydrolysis model was established to account for intrinsic granular properties, and was seamlessly integrated with a 1D intestinal advection-absorption model. A 3D duodenum model with essential features was developed to simulate starch-based particle digestion under near-real physiological conditions. The influence of physiological factors was coupled into the 1D intestinal digestion model by combining mechanistic and data-driven models. Furthermore, the proposed multiscale modelling method was also applied to predict drug delivery in the gastrointestinal tract.
