Moringa oleifera protein isolates: Extraction, isolation, functionality and applications

Moringa oleifera seeds are high in protein, which indicates possible nutritional and functional uses in food. This research highlights the effects of preparation techniques on the various properties of M. oleifera protein isolates (MPI). In addition, an application study on the encapsulation potential of MPI is studied. This research aims to discover new plant-based proteins to cater to the growing demand for nutritional foods and consumers who have dietary, religious, or ethical concerns associated with animal-based products. MPI has great potential for use in the formulation of a variety of food products or as a possible replacement for animal proteins.
