Impact of high-pressure homogenization pretreatment combined with different extraction and drying methods on the recovery of curcumin from turmeric and 6-gingerol from ginger

Curcumin and 6-gingerol are the main bioactive compounds extracted from the rhizomes of turmeric and ginger, respectively. These bioactive compounds exhibit extensive biological activities and health benefits. This thesis examined the impact of high-pressure homogenization pretreatment to increase the recovery of curcumin and 6-gingerol. Furthermore, curcumin and 6-gingerol content and antioxidant activity of extracts obtained from different extraction and drying method combinations were analyzed. The results prove that high-pressure homogenization significantly enhanced the recovery of curcumin and 6-gingerol, whereby different extraction and drying combinations influenced the extraction yield and antioxidant activity of turmeric and ginger extracts.
