Formation of gelatin microgels using water-in-water emulsification technique

Water-in-water (W/W) emulsion is an interesting template for microentrapment of hydrophilic compounds due to the biocompatible nature of its aqueous media. Gelatin is a good candidate because of its biocompatibility and the ability to form a thermally reversible gel. Gelatin microgels were successfully synthesised from the gelatin-based emulsion system via rapid cooling of the dispersed phase of gelatin. The model protein, green fluorescent protein, was successfully entrapped in the gelatin.<p></p>
