Auditing aggregate food waste in hospital food services and diverting it from landfill

Food waste is a global problem, and a large contributor to hospital waste. Measuring food waste and diverting food waste from landfill can contribute to its overall reduction. This PhD investigated auditing methods to measure all the food waste in hospital food services, from preparation through to returned uneaten food, as well as identified management strategies that can divert this waste from landfill. This research will support hospital food services to implement these strategies into practice so they can identify their waste amounts and areas for improvement, and divert their food waste from landfill to reduce their environmental footprint.
