Anthocyanins from blue pea flower (Clitoria ternatea) and black goji berry (Lycium ruthenicum): Potential natural food colourants

This study investigated the extraction, stability, and application of pigments from blue pea flowers and black goji berries as natural food colourants. Natural blue and purple food colourants are limited in the market. Hot water extraction was an effective and safe method to extract pigments from these sources. Pigments from both sources were stable in acidic and cold environments and against heat treatments. Furthermore, these pigments were highly stable in yoghurt compared to the commercially available natural blue and purple colourants. Therefore, natural pigments from blue pea flowers and black goji berries are potential natural blue and purple food colourants.
