饮食安全黄金定律

1989年,世界卫生组织提出了确保饮食安全的10条“黄金定律“,这十条定律为饮食的卫生安全和健康提供了非常明确的指导原则。

1. 食物煮好后应立即吃掉,因许多有害细菌在常温下可能大量繁殖扩散,故食用已放置4-5小时的熟食最危险。

2. 未经烧熟的食品通常带有可诱发疾病的病原体,因此,食品必须煮熟才能食用,特别是家禽、肉类。

3. 应选择已加工处理过的食品。

4. 食品煮熟后难以一次全部吃完,如果需要把食品存放四五个小时,应在高温或低温条件下保存。

5. 存放过的熟食必须重新加热后再食用。

6. 不要把未煮过的食品与煮熟的食品互相接触。这种接触无论是直接的或间接的,都会使煮熟的食品重新带上细菌。

7. 保持厨房清洁。烹饪用具、刀叉餐具等都应用干净的布揩干擦净。

8. 处理食品前先洗手

9. 不要让昆虫、兔、鼠等动物接触食品,因为动物大都带有致病微生物。

10. 饮用水和食品用水应纯洁,若怀疑水不干净,应作煮沸或消毒处理。

The golden rules of food safety

In 1989, the World Health Organisation introduced the 10 'Golden Rules' for food safety, which provide very clear guidelines for hygienic safety and health.

1. Food should be eaten immediately after it has been cooked, as many harmful bacteria can multiply and spread at room temperature, so eating cooked food that has been left for 4-5 hours is most dangerous.

2. Uncooked food often carries pathogens that can cause disease, so it is important that food is cooked before consumption, especially poultry and meat.

3. Choose foods that have been processed.

4. It is difficult to eat all the food at once after it has been cooked and if it is necessary to store the food for four or five hours, it should be kept at a high or low temperature.

5. Stored cooked food must be reheated before consumption.

6. Do not bring uncooked food and cooked food into contact with each other. Such contact, whether direct or indirect, can reintroduce bacteria to cooked food.

7. Keep your kitchen clean. Wipe cooking utensils, knives, forks and cutlery with a clean cloth.

8. Wash your hands before handling food.

9. Do not allow animals such as insects, rabbits and rats to come into contact with food, as most animals carry disease-causing microorganisms.

10. Use pure water for drinking and food. If you suspect that the water is unclean, boil or disinfect it.
